Breakfast Burritos

These are one of my absolute favorites for a quick, out the door breakfast that leaves me satisfied and energized for the day. The best thing about them is there are s many possibilities! Whatever produce might be sitting in that crisper drawer will pair perfectly with a little sausage or bacon and BOOM!, Monday morning just got something to look forward to!

Here’s how I make them:

  1. Start with the Tortillas. Stupid Easy Paleo was the first blog I started reading when we made the switch (the name gave confidence) and of all the tortillas I’ve made, these are some of my favorites. I love that they never crumble and have that almost chewy characteristic I look for in a tortilla. For these burritos, I double the recipes and add 1 tsp Chili Powder and 1/2 tsp garlic powder.
  2. Then Sautee:
    1. 1/2 Yellow Onion- diced 1 cup Red Bell Pepper- chopped
    • 1 cup Mushrooms- sliced
    • 2 cups Baby Spinich

3. Empty Pan on Plate and Brown 1 lb Sage Sausage
