Meal Plan 1

Sunday Funday: This term used to have a quite different meaning. Now, its Sunday Prepday with a side of IPA. I like to take a little time to get ahead on the week so I’ll go ahead and include the prep below.

Breakfast: Bacon, over easy eggs, mixed berries, OJ, coffee

Lunch: Turkey Lettuce Wraps

Snacks: Cashews

Dinner: Chicken Chorizo Chili

Prep: Breakfast Burritos (and freeze), Hard Boiled Eggs, Breakfast Cookies, 1/2 C Almond portions, 1/2 C Dried Apricot portions, 1/2 cup Almond and Cashew portions (portioning snacks ahead of time makes lunch packing a breeze!)

Monday:

Breakfast: Breakfast Burrito, OJ, Coffee

Lunch: Leftover Chili

Snacks: Banana, Breakfast Cookie

Dinner: BBQ Pork Chops with Brussel Sprouts and Spicy Sweet Potatoes

Tuesday:

Breakfast: Hard Boiled Egg, Breakfast Cookie, OJ, Coffee

Lunch: Curry Tuna Salad Lettuce Wrap, Apple

Snacks: Almonds, Dried Apricots

Dinner: Steak Fajitas with Black Beans

Wednesday:

Breakfast: Mango-Banana Smoothie, Hard Boiled Egg, Coffee

Lunch: Leftover Fajita Salad (Throw last nights leftovers on some romaine and top with avocado and salsa. So Easy. So Quick. So Good.)

Snacks: Cashews, Baby Carrots

Dinner: Zucchini “Pasta” with Marinara and Spicy Sausage

Thursday:

Breakfast: Breakfast Burrito, Banana, Coffee

Lunch: Turkey Lettuce Wraps

Snacks: Apple with Almond Butter, Breakfast Cookie

Dinner: Sesame Chicken Thighs with Broccoli and Cauliflower Rice

Friday:

Breakfast: Berry-Banana-Almond Smoothie, OJ, Coffee

Lunch: Spinach Salad

Snacks: Cashews, Dried Apricots

Dinner: Blackened Cod, Mashed Cauliflower, Brussel Sprouts and Spinich

Saturday:

Breakfast: Blueberry Flax Pancakes, OJ, Coffee

Lunch: BLT Wraps with Sweet Potato Chips

Dinner: Slow Cooker Italian Beef

Dessert of the Week: I usually find a new recipe every week and find some time over the weekend to make something for the week.
